鮭目鮭科中某些魚類的泛稱。具洄游性，產於北方水域。成熟時自海洋返回淡水河川　生殖，幼魚孵化後，再進入海洋。在海洋中時，體呈銀白色或銀灰色，返回淡水河口後，體色變紅。太平洋鮭屬產卵後隨即死亡，大西洋鮭則部分可重回海洋。產量以美、加、日、俄最多，是重要的食用魚。
